Share a Recipe

I'm going to try sharing recipes as I come across a good new recipe or share an all time favorite. We have lots of favorites, but today I'm going to share a new one that I took out of a Bon Appetit . I have made some alterations to it to make it prettier and easier.

Caramel Walnut Upside Down Banana Cake

1 3/4 cups flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 cup butter, room temp
1/2 cup sugar
1/2 cup brown sugar
2 large eggs
1 cup mashed very ripe bananas
3 Tbsp sour cream
1 Tbsp dark rum
1 tsp vanilla extract
3/4 cup walnut halves or pieces

1/2 cup unsalted butter
1 cup brown sugar
3 Tbsp dark corn syrup

Preheat oven to 350 degrees F. Spray 8 inch round cake pan with 2 inch high sides with non stick spray.
Sift first four ingredients into medium bowl. Using an electric mixer, beat butter and both sugars until blended. Beat in eggs 1 at a time, then mashed bananas, sour cream, rum, and vanilla. Beat in dry ingredients in small batches until combines.
Pour walnuts into the cake pan then batter on top. Bake cake until toothpick comes clean from the center, about 55 minutes. Cool 15 minutes. Cut around the cake. Place serving platter over the cake pan. Holding platter and cake pan turn over quickly. Let stand 5 minutes, then gently lift off pan.
After turning the cake over, work on the topping.
Bring butter, sugar, and corn syrup to boil in medium saucepan, stirring constantly until butter melts. Boil syrup 1 minute. Pour slowly over the top of the cake. Allow to cool and set before serving.
We served this at a get together with ice cream and it was a hit among everyone who had it. Hope you enjoy it. Let me know how it turns out if you make it.

I made the cake, minus the walnuts of course. It was really good! I might use the batter to make banana bread muffins next time. :)
